Don't Toss That Turkey! Try this Thanksgiving Transformation Instead!

For many of us, Thanksgiving leftovers leave us feeling bored before the holiday weekend is even over. If the thought of more gravy and stuffing holds no more appeal, fear not: our friend Anna Pittinger of Apropos Catering has a delectable turkey do-over you won’t want to miss!

Start by pre-heating your oven to 375 degrees. Grab any and all of your favorite root vegetables. Got leftover raw carrots? Onions? Parsnips? Beets? Sweet potatoes? Or brussels sprouts? Dice them into bite-sized chunks, toss with 2 tablespoons of extra virgin olive oil and scatter them on a baking sheet. Sprinkle with salt and pepper and maybe a little garlic powder if you are feeling like Bobby Flay. Roast 35 minutes.

While your vegetables are getting toasty and making your kitchen smell amazing, locate your turkey pieces and slice them into medallions of golden goodness. Coat the bottom of a sauté pan with a little olive oil and arrange a single layer of turkey in the pan. You are going to warm the turkey slowly in the pan on a low heat, turning occasionally. That’s it for your bird until it's time to plate up.

Last but not least - by any stretch - is the glaze of all glazes! It can transform almost anything edible in your kitchen into an elegant yet easy, savory yet easy, beautiful yet easy, taste of deliciousness. (Bonus: you can put this stuff on anything!)

n a small pot, heat ½ cup of balsamic vinegar on low to medium heat.  Add ¼ teaspoon of garlic powder, ¼ teaspoon of onion powder, ¼ teaspoon of salt and 2 tablespoons of honey. Simmer for 10 minutes to allow the ingredients to meld and twirl in your pot. Finally, in a separate cup of any kind, mix 1 tablespoon of cornstarch with water until the cornstarch is fully dissolved. Add the cornstarch mixture to your balsamic and allow to thicken. Note: pure corn starch is gluten free!

Finally, plate up and be proud. Spoon a generous portion of vegetables onto your plate. Arrange your turkey medallions on top and, using a spoon, drizzle your balsamic glaze over the top. Savor your incredible, transformed Thanksgiving turkey and the compliments from your family!
